Invalid CRD definition because of the wrong quotation mark

Describe the bug
In pull #3083 a validation was introduced "self == ” fragment. Note that there is ” instead of '' here. This prevents OLM from properly applying the CRD

Environment

• Openshift 4.19, operator build from branch release-6.3
• ClusterLogging instance

Expected behavior
Operator installs

Actual behavior
Operator does not install

To Reproduce
Steps to reproduce the behavior:

1. Try to bundle and fresh install with OLM
2. See InstallPlanFailed
3. With CRD apply errors
